Storage

Store at room temperature away from direct sunlight. Do not refrigerate - cold temperatures accelerate crystallisation. Natural crystallisation is a sign of purity and raw quality; gently warm the jar in a bowl of warm water to re-liquefy. Never microwave. Shelf life: 2 years unopened.

Origin Story

The Mangrove Delta
of the Sundarbans.

The Sundarbans - meaning "beautiful forest" in Bengali - is the world's largest tidal mangrove forest, spanning 10,000 square kilometres across the delta of the Ganges, Brahmaputra, and Meghna rivers. A UNESCO World Heritage Site and home to the Bengal tiger, it is one of the most biodiverse and ecologically complex ecosystems on Earth.

Every spring, between March and May, the Mawali community - hereditary honey-collectors of the Sundarbans - venture deep into the forest to harvest wild honey from the hives of the giant rock bee (Apis dorsata). They carry only traditional tools: a smoky torch made of dried leaves, a clay pot, and generations of knowledge about the forest's rhythms. The honey is collected by hand, strained through cloth, and never heated.

The nectar source is primarily the Khalsi (Aegiceras corniculatum) and Goran (Ceriops decandra) mangrove blossoms - species found nowhere else in the world. This unique floral source gives Sundarbans honey its characteristic dark colour, complex bittersweet flavour, and exceptionally high antioxidant content. Amā (अमा) works directly with three Mawali cooperatives, ensuring fair pricing and sustainable harvesting quotas that protect the hive populations.
